Chicken Pasta Salad

This pasta salad is so delicious!

Make it for larger gatherings because it makes a big batch. Plus, make you can make it a day or two ahead.

Its got a lot of interesting ingredients like capers, sundried tomatoes and pine nuts.

I made it for a wedding open house and for a birthday party and both times it was a hit!

I like to make this one the day before I serve it because the flavors really marinade nicely together over night. Plus, food is ready! I have made this as a single dish salad for a bridal or as a side.

A couple of notes:

The recipe calls for 2-3 chicken breasts but I usually only end up putting 1 and 1/2 of shredded chicken breast in depending on how much chicken you like. I like less.

When we have company stay with us I like to keep this in the fridge for quick lunches or a snack. It will last up to 5 days in the fridge.
