Chicken Masala

This recipe is so good.

Not just so good. It’s extremely delicious.

My son makes this Indian inspired chicken dish for us. It’s a big treat. We all devour every last drip of sauce.

Here’s what you’ll need.

chopped onion

ingredients:

  • 1 tsp white vinegar
  • 1/2 c heavy cream
  • 2 bay leaves
  • 3 Peppercorn
  • 3 whole cloves
  • 1 Tbl oil
  • 1 med chopped onion
  • 2 minced garlic cloves
  • 14 oz tomato puree
  • 1/2 tsp coriander powder
  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • 1/4 tsp black pepper
  • 1/2 tsp salt (to taste)
  • 3 c cooked rice
  • 4 chicken breasts cubed/raw

Dice chicken and marinate in salt & white vinegar for a couple of hours or over night.

In a med sauce pan heat oil. Flavor with bay leaves & whole cloves for just a few minutes. Remove bay leaf and cloves here or at the end.

Caramelize the whole onion in the oil with a pinch of salt.

Add minced garlic. Sauté 1 minute.

Add tomato puree to the sauce pan in small batches. Simmer and stir until the puree separates from the oil.

Add chicken and remaining spices to the puree. Once chicken is cooked, remove pan from heat and add desired amount of cream.

Serve over rice. Naan bread is a must to lick up the sauce.

When I was working full time, my son would time this to be ready as I walked through the door. That made me so happy.
